I haven't traditionally made too many soups in my day, but this is a winner. Made by my mother and grandmother and family from Europe, it is hearty, easy and delicious! And...believe it or not...now customized to be made in a slow cooker. So you can do it in the morning or night time while the little ones are asleep and have a tasty and delicious dinner all ready.
So...
2 ham hocks
one container white beans soaked overnight
4 stalks celery diced
one sweet onion diced
3 carrots diced
3 cups chicken broth, the rest water- as much or little as you want
fresh thyme, garlic, rosemary, etc to taste
1 Russett potato chopped
Throw them into the cooker, cook on low for 6-8 hours. Take out the ham hocks and pull of the meat and return to the cooker. Delicious served with a drizzle of olive oil and sea salt on top with crusty baguette, ala Paris! Enjoy.
